6 chicken thighs

3 tablespoons olive oil

1 lemon, juiced

1 teaspoon lemon zest

1 tablespoon minced garlic

1 teaspoon paprika

1 tablespoon salt

1 tablespoon oregano powder

Pepper to taste

Salsa De Leon

6 corn or flour tortillas

1 bell pepper, sliced

1 tomato, sliced

1 bunch cilantro, chopped

Queso fresco, broken up

1 avocado, sliced

Instructions

Marinade:

  1. Combine olive oil, lemon juice, lemon zest, minced garlic, paprika, salt, oregano powder, pepper, and Salsa De Leon in a bowl.
  2. Marinate the chicken for at least 1 hour or overnight for deeper flavor.

Chicken:

    1. Heat olive oil in a pan and add the marinated chicken.
    2. After 5 minutes, add the bell pepper and tomato to the same pan.
    3. Remove the veggies when tender and set them aside.
    4. Cook the chicken thoroughly, then remove from heat.
    5. Warm up the tortillas and assemble the tacos by adding chicken and veggies.
    6. Top with queso fresco, cilantro, a slice of avocado, and an extra drizzle of Salsa De Leon.
